Color choice

In our last house or deck had the amazing weathered gray look to it, it was perfectly worn with character. In our new house we've discussed building a deck but I can't decide what stain to choose or how to keep it looking fresh/new but aged to perfection. I suppose you can't have the best of both worlds! Also, favorite sealant.
