Polishing Wood

I have started polishing all the wood work in my 1888 Home.  Stairs, Crown and Base boards, and Raised panel Doors and panels under stairs, and Windows. My sound bad enough so far but 10 foot cielings, 9 foot raised panel doors, including 2 sets of 7' wide pocket doors , about 10" wide crown moulding everywhere.  I believe it is all mahogney.  

My question:  I have been using a product (not sure if we can name names here), in a spray can and is somewhat oilly,  that initially produces a great shine but soon goes flat.  Wood still looks much better than when I started.  Any Other Products you like for this kind of wood.
